The choice between refractory and embossed metal sheet is made based on the type of product you want to get.

The oven with a refractory cooking surface needs more time and energy to reach the desired temperatures.

Cooking on an embossed metal sheet bedplate is less aggressive than on a refractory floor, because the particular conformation of this material allows the formation of a cushion of air under the baking tray.

You cannot cook food directly on the embossed metal sheet, you must always use baking trays, however, baking in a baking tray is also widespread among users of ovens with bedplates made from refractory material, considering their versatility and specific heat transmission feature.
