On the cooking bedplate in refractory material (cement, cordierite) pizza and bread can be baked directly on the floor, by using a peel or an oven loader.

An oven floor made from suitable material for cooking food, enables serving food that has been directly cooked on it.

The refractory bedplate is slightly rough and grey/yellow in colour. It is a compound that is resistant to high temperatures. To prevent cracks needs to be pre-heated in the first moments of operation.
