2: Zanolli ovens have a specially insulated structure that minimizes heat dispersion, increases energy efficiency, and maintains a safe temperature on the outside surfaces to prevent burns. The Economy function (Teorema Polis PW, Synthesis and Citizen PW Digital ovens) is also available, that allows the oven to be kept hot between one shift and the other, avoiding sudden energy peaks.
