Edges of the dough overcooked or pizzas only cooked on one side? There’s a trick! Distributing food during the cooking process must be done in a regular and even way, taking into account that the dough cooked directly on the refractory will be cooked in advance, due to the empty area of the bedplate which is hotter than the part  what has already been used.

The refractory material also has this characteristic: after accumulating heat, it will transfer it into the oven walls. Thus, the heat… moves, and always chooses where to go! The coldest areas, walls and dough, are its favourite victims!  Carefully place the pizzas inside the cooking chamber and… make the best of you new friend!

Example of advance cooking: the dough will be mostly heated by the heat coming from the centre of the bedplate.

Also consider that lower temperatures or ovens with several small sized cooking modules, rather than a single larger module, can help achieve even cooking!
